[англ. amino — группа NH2, от англ. ammonia — аммиак, от лат. sal ammoniacus — соль Аммона, нашатырь]жизненно необходимые аминокислоты, которые не могут быть синтезированы в организме человека и большинства других позвоночных и которые должны поступать только извне с пищей. группа полиненасыщенных жирных кислот растений, которые не могут быть синтезированы в организме человека и большинства других позвоночных и, следовательно, должны поступать в них с питанием; к Н.ж.к. относятся арахидоновая, альфа-линоленовая, линолевая, докозагексаеновая и др. Арахидоновая кислота является предшественником эйкозаноидов (простагландинов и лейкотриенов) и поэтому обязательно должна присутствовать в пищевом рационе. Линолевая и линоленовая кислоты, имеющие более короткую углеродную цепь, могут превращаться в арахидоновую за счет наращивания цепи, и, следовательно, являются ее заменителями. Н.ж.к. способствуют нормализации холестеринового обмена (см. холестерин), снижению риска развития атеросклероза и др. сердечнососудистых заболеваний. Их недостаток в организме человека и животных приводит к уменьшению скорости роста, повышенной чувствительности к инфекциям, повреждению почек и др. патологическим эффектам.Толковый биотехнологический словарь. Класс органических соединений, для которых характерны свойства как карбоновых кислот, так и аминов; Аминокислоты играют большую роль в жизни организмов, являясь основным элементом построения белков.
Аминокислоты, не синтезируемые высшими позвоночными и получаемые ими непосредственно из пищи. Для человека это изолейцин, лейцин, лизин, метионин, фенилаланин, треонин, триптофан и валин.
Отличаются от аминокислотного остатка наличием дополнительного атома водорода на одном конце и дополнительной гидроксильной группы на другом.

organic nitrogen
Essential nutrient of the food supply of plants and the diets of animals. Animals obtain it in nitrogen-containing compounds, particularly aminoacids. Although the atmosphere is nearly 80% gaseous nitrogen, very few organisms have the ability to use it in this form. The higher plants normally obtain it from the soil after microorganisms have converted the nitrogen into ammonia or nitrates, which they can then absorb. This conversion of nitrogen, known as nitrogen fixation, is essential for the formation of amino acids which, in turn, are the building blocks of proteins. (Source: WRIGHT)
